Bacon & Cheese Quiche- Quick & Tasty!

4 Ramekins

Crust Options* (see below)

2 Eggs

1/2 Cup Milk

1/2 Cup Mayonnaise

1 Tablespoon Cornstarch

2-3 Tbsp Favorite flavor Rustic Tomato™ Chili Sauce

1/2 to 1 Cup Grated Cheddar Cheese

*optional 1/4 Cup Other Cheese (Swiss, Parmesan)

*optional Veggies (Onion, Mushroom, Chives)

4 Strips of Bacon

Store bought pie crust or puff pastry

Homemade pie crust

What I used– 24 Ritz Crackers (6 each ramekin), 1 Tbsp butter


Heat up the oven to 350 degrees Fahrenheit.  Combine milk, eggs, mayo, cornstarch in small mixing bowl & mix into smooth.  Break up or dice the bacon to desired pieces, shred the cheese(s) and chop veggie options.  Mix in Rustic Tomato Chili Sauce, cheese, veggies and bacon.  Coat each ramekin with a thin layer of butter and create a crust layer from “Crust Options.”  For my option, crush 6 Ritz crackers in a sandwich bag, pour into ramekin.  Melt 1 Tbs butter and pour over crushed crackers.  Mix butter and crackers and shape bottom and sides of ramekin evenly with crushed cracker mix.  If using another crust, shape crust to ramekin evenly on bottom and sides.   Fill each ramekin to 3/4 full.

 Place all ramekins on a cookie sheet and bake for 25-35 min (until knife comes out clean and eggs are cooked)

Top with Rustic Tomato™ Chili Sauce
